Pyaz koli! Do you know what it is? Yes it is actually spring onion. in Bengali. We Bengalis mostly eat the stick which carries the flower or bud. But spring onion leaves are not so popular in Bengali. Though some people consume those leaves as salad but still spring onion leaves curry it not so popular in West Bengal. I do not know whether those leaves are used to make any popular curry in any other parts in India or not.
But still some people like it a lot and I belong to that group of people. I tried this type of leaves curry in a roadside dhaba in Haryana but they used besan or something else to make that. That curry was more spicier than me.
I usually use spring onion to make soups. The stick what carries onion flower also use a popular vegetable in West Bengali. But Bengali Bengali just simply fry those flower stick with potato, no other ingredients are used to make such dish. If you are a Bengali then you can understand the dish.
But spring onion leaves curry is an unusual curry. It is very delicious and I love this item with chapatis or parathas. This year it was my first pyaz patta curry and I enjoyed a lot.
Interesting thing is that, this year I am growing onions too. So I am looking forward when those leaves will be ready for harvesting and I can eat chemical free organic spring onion leaves for the first time that too homegrown. Did you ever grow spring onions at home?

Spring onion leaves curry recipe
- 1.5 cups finely chopped spring onion leaves
- 1 medium size potato (boiled)
- 1.5 teaspoons ginger paste
- 1.5 teaspoon cumin powder
- 2 teaspoons coriander powder
- 1.5 teaspoons turmeric powder
- 1.5 teaspoons red chilli powder
- 2 medium size tomatoes, finely chopped
- 1.5 teaspoons lemon juice (optional)
- salt as needed
- 1.5 tablespoons refined vegetable oil
- ½ cup water
- Heat oil in a cooking pot and add ginger paste, cumin powder, coriander powder, turmeric powder, red chilli powder and stir to mix all spices for next 1 minute
- Add finely chopped tomatoes and cook till it becomes soft
- Then add mashed potatoes and cook for another 2-3 minutes over medium flame
- Add salt, lemon juice and chopped spring onion leaves and cook till those leaves become soft & perfectly cooked
- Pour water, stir and cook over low/medium flame till water almost dried up
- Serve it

How to make spring onion leaves curry?
Heat vegetable oil in a kadai and add ginger paste, all spices, finely chopped tomatoes and mashed potatoes one by one and cook over medium flame for 5-6 minutes
Now add salt, lemon juice and chopped spring onion leaves and mix all. Cook it til leaves become soft
Pour water and cook till water almost dried over low to medium flame. Stir after regular interval otherwise curry becomes sticky at bottom.
Serve this awesome spring onion leaves curry with plain roti or paratha or naan.
