Who does not like litchi during summer day? Do you? I think only a few people may do not like litchi, that number is definitely negligible. What do you think? Litchi is a very sweet fruit and that’s very juicy too. Litchi is generally available in the market for a short duration, so whenever season comes people enjoy this fullest. Lassi is another refreshing drink for summer. It is very popular in Northern India and in some neighboring countries too. So here comes the fusion of litchi and lassi, and the result is litchi lassi. Another great summer drink for all.
I prefer to have this litchi lassi almost daily during its season because I know after few weeks I can’t get fresh litchi fruits. Actually, litchi is mostly available in the market for three weeks after that after that it becomes costlier and then within few days it would be no more available in the market. Yes, you can have many bottled litchi drink from the market and you can not get fresh litchi fruits anymore for that season.
So for litchi lovers, it is really a special YUM drink. Most importantly fusion of litchi puree and curd really works so brilliantly. It is a little bit thick and with additional lemon flavor create the fantastic aroma. Though when I first time makes this I did not half-frozen this drink when I thought to keep it in the freezer for just one hour and then add lemon juice and blend just before having this, surprisingly it became more delicious and refreshing drink.
Litchi lassi recipe
- Litchi - 400 gm
- Lemon juice - 2 tsp
- Curd / Yogurt / Dahi - 200 gm
- Sugar - ½ cup
- Black salt - pinch of
- Water - 3.5 glasses
- Ice cubes - as needed
- Remove Litchi seeds and put in a mixie
- Now add curd, sugar & water and blend all and keep inside freezer for one hour
- Take jar from freezer and add lemon juice and black salt and again blend to mix
- Now pour litchi lassi into glasses and serve with ice cubes
