Being an Indian, pancakes were never my breakfast food since my childhood. I used to have luchi – sabzi, paratha – dum aloo etc as my breakfast. Though all those are Indian food but mostly popular in Maharashtra. Sabudana vada is also a great option for breakfast but still very uncommon except Maharashtra. When I was child I used to have roti or vegetable rice for breakfast during weekdays and luchi – paratha for weekends. Though those days weekends meant only Sunday because we had school on Saturday too, haha.
So you can understand pancakes were never in my breakfast menu, I think there will be very few persons in India who used to have pancakes in their breakfast since childhood but nowadays people love to have anything delicious & healthy. So pancakes are being popular gradually in India too. The best part of pancakes is it is very easy to make and people aged from 8 to 80 yrs love this food. Homemade awesome fruit pancakes recipe
- 2 Banana
- 1 cup all purpose flour/maida
- 1 egg
- ½ cup sugar, powder
- 1.5 tsp vanilla essence
- 1 tsp baking powder
- 1 tbsp fresh cream
- ½ cup milk, or as needed
- 1.5 tbsp oil
- 1 cup - mixed fruits, chopped (apple, black grapes)
- Add milk, fresh cream & banana to a blender and make banana smoothie
- Now take banana smoothie in a large bowl, add egg, sugar powder, vanilla essence & all purpose flour and mix to make smooth batter, add extra milk if it is needed
- Heat oil in a cooking pan, spread oil throughout the pan, then pour a full spoon batter/mixture and spread to make 3-4 inch circle
- Cook both sides of pancakes
- Serve pancakes hot with enough chopped mixed fruits
