Instant rava uttapam - An Indian alternative to veggie pizza

Ingredients
For rava uttapam batter preparation
  • Rava/suji/semolina - 200 gm
  • Curd/Yogurt/dahi - 2 tsp
  • Baking powder - 1 tsp
  • Salt - as needed
  • Oil - 1 tbsp
  • Water - 1 cup + little more
For vegetable toppings
  • Onion - 1 medium size, chopped
  • Tomatoes - 2 small, chopped
  • Capsicum - 1 small, chopped
Instructions
  1. Add rava/semolina, curd/yogurt and water in a large bowl and then mix properly, keep it for 20 next minutes
  2. Now after 20 minutes add salt, baking powder, oil (and little more water if needed) and then mix again and keep aside for further few minutes
  3. Now heat a flat cooking pan, add few drops of oil on cooking pan, allow it to spread by moving the pan
  4. Spread a big full spoon of batter over that cooking pan, fry for 1 minutes, then spread chopped vegetables over and cook for one minute again and then reverse it and cook opposite side of uttapam to cook chopped vegetables too, add oil from the side of uttapam if needed
Notes
You can add any other vegetables of your choice as vegetable toppings
Serve this instant rava uttapam hot with coconut chutney, samabr dal or schezwan sauce
