Mix vegetable recipe - semi dried curry

Make mix vegetable dish. East Indian (Bengal) style
Ingredients
  • Vegetables (Beans – 4-5, Carrot / gajar -1, Tomato – 2 medium size, Potato / aloo – 1 medium, Pumpkin / kaddoo – 100 gm, Pointed gourd / parwal – 4-5, Brinjal / bengan – 1 small size, Amaranth – 3-4)
  • Ginger – 2 tsp
  • methi – ½ tsp
  • coriander seeds – ½ tsp
  • cumin seeds – ½ tsp,
  • mustard seeds – ½ tsp,
  • black cumin seeds – ½ tsp)
  • Red chilies -2
  • Turmeric powder – 1 tsp
  • Oil – 1.5 tbsp
  • Salt - according to taste
  • Water – 2.5 cup
Instructions
  1. First heat oil in a kadai and add ginger paste and then red chilies
  2. Now add all whole spices and let those start cracking
  3. Add potatoes and fry for 2 minutes and now add all other vegetables & salt and cook well
  4. Add turmeric powder, mix all vegetables and spices properly
  5. When all vegetables become soften, add water to boil all vegetables
  6. Boil those for 15 minutes and when it becomes dry then switch off flame
  7. Take mix vegetable in a serving bowl and serve warm
