Delicious vegan broccoli curry for chapathi

Ingredients
  • 1 medium size broccoli
  • 1 large size potato
  • 1.5 teaspoons grated ginger
  • 1.5 teaspoons coriander powder
  • 1.5 teaspoons red chilii powder
  • 1 teaspoon turmeric powder
  • 1 medium size tomato, finely chopped
  • Salt as needed
  • Water for boiling
  • 1 tablespoon refined oil
Instructions
  1. Cut broccoli & potato into small pieces and boil it for 4-5 minutes (just semi boil)
  2. Heat oil in a cooking pot and add grated ginger & saute
  3. Add coriander powder, red chilli powder, turmeric powder and saute till nice aroma comes out
  4. Now add finely chopped tomato & salt, cook it over medium flame for next 2-3 minutes
  5. Then add all semi boiled potatoes & broccoli one by one and stir to mix with all spices
  6. Cook another 4-5 minutes till all vegetables are perfectly cooked
  7. Serve
Notes
You can spread one teaspoon lemon juice just before serving
