Popular Marwari Wedding Food
This is most traditional Rajasthani dish. Bati is flour & rava sooji (semolina) made round shaped food which is served with special Rajasthani dal (beans curry)
Churma is traditional sweet dish which served with dal bati. This is prepared with wheat flour, ghee, sugar and dry fruit. You can see most of the Rajasthani old dishes are prepared in a way so that those dishes can be store at home for longer period and serve whenever want.
Kadhi is popular in North India also. This kadhi is prepared with besan (chick peas flour), dahi (curd) and many spices. Pakda can be added in kadhi. Generally onion pakoda is used in kadhi.
Dal tadka is another popular dish which is famous in Rajasthan, Delhi, UP, Bihar, Haryana, Punjab, Uttarakhand and some other states in India. Tadka means tempering which is added in dal and serve. Lahsun (garlic), lal mirch (Red chili) and ghee are used for tempering. It is very good with roti as well as rice.
Aloo (potato) with seasonal vegetable sabzi
Aloo with some other seasonal vegetables sabzi is favorite Rajasthani food. As Marwari wedding food are mostly vegetarian, so they they prefer such seasonal sabzi in menu.
Wheat flour made fried another delicious dish with stuffing of beans, spices, hing etc. Kachori also popular in various other parts of India.
Bajra methi ki poori
Bajra methi ki poori is popular in Rajasthan and Gujarat. By kneading wheat flour, fenugreek leaves (methi), ginger, garlic, coriander powder, dry mango powder and litle bit sugar, make dough, roll, give circular shape and fry in oil.
Gatte ki pulao
Vegetables are not available throughout the year in Rajasthan. It high scarcity of water, many dessert area. So people use such thing what can be store longer period or which is easily available there. That is why you can see besan or chick pea flour made items are used in various food. Gatta is also another besan made food. Besan and other ingredients are mixed and made dough and finally make small pieces of raw gatta which are boiled and deep fried in oil. Such gaata pieces are used to make pulao. This gatte ki pulao is very delicious and very popular in Rajasthan.
It is fusion of ker berry and sangri beans and some other common used spices. This ker sangri dish is preferred by Marwari people. You can often see this dish in Marwari wedding food menu.
Raita is very popular in Northern India and also in some western states of India. In Rajasthan it is also very popular. Its main ingredients are curd (dahi) & spices (coriander powder, cumin powder, red chili powder, salt, black salt etc). Boondi, vegetables etc are added to make different types of raita.
Halwa is very common dessert in Marwari wedding food menu. There some varieties in halwa, like Moong dal halwa, Badaam ka halwa etc.
