Heat oil in a wok and add finely chopped garlic and onion to fry
When onion and garlic turns to light brown then add tomato paste and onion paste and stir
Cook all ingredients in a wok for 4-5 minutes and let mouth watering fantastic aroma come out
Now add all spices (roasted cumin powder, roasted jeera powder, garam masala, sun-dried red chilli powder) and mix with all other ingredients and also add salt as needed
Add all chopped seasonal vegetables (carrot, green beans, green peas etc) in the wok and fry with all spics, it may take another 5 minutes, (by that time you can boil raw pasta in another cooking pot and keep it aside when it will be boiled, it will take hardly 5-7 minutes)
Once you have done with frying mixed vegetable, now pour water and stir and boil to adjust thickness and also add lemon juice
Now when it becomes thick gravy, then add all boiled pasta and mix with all vegetables and let any residual gravy be absorbed in pasta
Spicy mixed vegetable pasta is ready to serve
Notes
Use any seasonal vegetables of your choice to make this dish. If you have ready-made tomato puree at home then use it instead of tomato paste Adding some black pepper powder may work to some extent but as here already little more sun-dried red chilli used. So be a little bit careful unless it will be too hot If you want gravy then adjust gravy while cooking, preserve pasta-boiled-water what was used for boiling pasta and add this in Indian style spicy mixed vegetable pasta, boil to adjust the thickness
