Litti chokha, A traditional Bihari food

Ingredients
  • For litti
  • Wheat flour - ½ cup
  • Refined all purpose flour (maida) - ¼ cup
  • Sattu - ¼ cup
  • Turmeric powder - pinch of
  • Salt - as needed
  • Oil - 1 tsp
  • Stuffing ingredients for litti
  • Sattu - 1 cup
  • Onion - 2 medium size
  • Ginger - 1.5 tsp (grated)
  • Garlic - 3-4 cloves
  • Cumin powder - 2 tsp
  • Coriander powder - 2 tsp
  • Red chili powder - 2 tsp
  • Salt - as needed
  • Ghee - 1 tbsp
  • Water - as needed
  • For chokha
  • Brinjal / baingan - 1 large size
  • Potato - 1 small size
  • Tomato - 1 medium size
  • Onion - 1 large size
  • Ginger - 2 tsp (grated)
  • Coriander leaves - 3-4 leaves
  • Green chili / hara mirch - 3-4
  • Lemon juice - 1.5 tsp
  • Oil - 1 tbsp
  • Salt - as needed
Instructions
  1. For litti preparation
  2. Mix all stuffing items very well and add water as needed to make dough of sattu and make 6-8 balls and cover those with a clean cloth for 30 minutes
  3. Mix atta, maida, turmeric powder, oil, salt and also add water to make soft dough and make small flour balls and roll to make 5-6 inch diameter circle
  4. Now put sattu stuffing ball inside wheat flour made circle and cover stuffing item inside wheat circle properly and make proper round shape of those by using your hand
  5. Now bake all those litti in oven
  6. For chokha preparation
  7. Grill brinjal in oven, boil potato and tomato and mash each vegetable one by one
  8. Now heat oil in a pan and add chopped onion, chili and grated ginger and fry for 3-5 minutes
  9. Then add mashed tomato and mix with other ingredients
  10. Now add mashed potato and stir well for 3-4 minutes and then add mashed brinjal / baingan too
  11. Add lemon juice and mix with all ingredients
  12. Now switch off flame and take chokha in a serving plate and garnish with coriander leaves, finely chopped onion
