Creamy mixed vegetable soup! This is a weird soup but surprisingly very delicious. There are various types of vegetable soups are available in this world. Some soups look very mouth watering, some soups are very interesting in terms of process, ingredients, taste and appearance. But most people prefer only few numbers of soups. This is only because of the way we develop our taste. Most of the time we refrain us to explore new things. Right?

Cream is not an uncommon ingredient, it is often used in used in soup like any other dishes. Fresh cream is used in many north Indian dishes. Particularly in paneer made dishes fresh cream is very widely used. But here not only fresh cream was used but also full cream milk was added to make this soup more delicious and different. That is why it look different than any other traditional soups. Particularly in India people prefer little spicy food and so Indian soups can not be different. Mostly restaurant style Indian type soups are spicy. So here creamy mixed vegetable soup comes to surprise you.
I liked this soup very much and though in Indian style soups, milk is not generally added but in some European style soups milk is added. You may have tasted any of such kind of soups at restaurants. It is little bit sweet in taste but you can not say it a sweet dish as black salt was added to this creamy mixed vegetable soup. If you want to add tomatoes to bring some color in this soup then I would recommend you to deseed tomatoes and then chop and add to this soup.
As said, this creamy mixed vegetable soup looks like a sweet dish, 🙂 it simply does not look like traditional vegetable soup. What do you say? People who rarely try something new, may find this not worth to try, but I liked this and initially I thought it was not a good attempt but taste of this soup proved me wrong and surprisingly it was simply yummy.
This recipe has two tricky steps, first one is, frying onion and ginger little more than other vegetables and second one is, let all vegetable to absorb milk. You just need to boil vegetables in full cream milk and boil it till milk will be dried up.
Creamy mixed vegetable soup recipe
- Mushroom - 5 pieces (chopped)
- Cabbage / patta gobi - ½ cup (finely chopped)
- Carrot / gajar - 1.5 inch (cut into fine slices)
- Green peas / hara matar - ¼ cup
- Tomato / tamatar - 1 small size deseeded (optional)
- Onion / pyaz - 1 small size (chopped)
- Ginger / adrak - 1 tsp (grated)
- Full cream milk - ½ cup
- Fresh cream - 2 tbsp
- Butter - 2 tbsp
- Black salt - pinch of
- Water - 2 cups
- Saute ginger and onion in butter for 2 minutes and then all other vegetables (mushroom, cabbage, carrot, green peas and tomato) and fry for 2-3 minutes
- Now add full cream milk and boil till it become almost dry and then add 2 cups of water and again boil for 7-8 mins
- Add fresh cream & black salt and stir
- Switch off fire and pour soup in serving bowl
